Have the butcher cut into 2-inch size slices across the bone or whole
Boil for 5min to remove any floating bubbles and to thoroughly clean pork
Wash pork pcs with tap water and clean once more
1 onion chopped
4 cloves garlic
10 pcs peppercorn
2 pcs leg of star anise
add 2 cups water with 1 beef bullion or 2cups beef stock
add preboiled and cleaned pork knuckles
4 Tbs oyster sauce
4 Tbs soy sauce
2 Tbs sweet chili sauce
1 Tsp sugar
1/2 Tsp vinegar
Slow cook for about 1.5 hrs ( adding water is optional ) or pressure cook for 30min
Remove pork knuckles
Boil bok choy or Chinese cabbage for about 1 min in sauce and remove
Return pork knuckles
Add banana blossoms
Simmer on low flame to reduce the sauce for about 30 min and allows you to continue to soften the meat
Simmer sauce to reduce liquid until desired strength and taste or until about 3/4 cup liquid
On a plaate layer the vegetables and arrange the pork knuckles and pour thee sauce over
